I love healthy salads now, but that certainly wasn’t the case when I was younger, and I attribute that to the fact that most of the salads available to me where boring for my tastebuds. Nowadays I have learned that the key to good salads is quality ingredients and experimentation with unusual combinations.
Since I started being mindful of my health, and more adventurous with my cooking, I’ve discovered a ton of amazing new flavors, one of which is Reese Hearts of Palm. I first tried hearts of palm while living in Brazil, where they are added to all kinds of dishes from pizza to pasta, and since then I was dismayed to see this super food delicacy isn’t as widely used elsewhere in the world. I think we need to change that because they’re delicious!
To make this amazingly yummy and nutritious salad I love, you’ll need:
First, wash a cup of quinoa and put it in a rice cooker with two cups of water. Let it cook as if it were rice. While that is cooking, wash and slice the mushrooms (if you bough them whole), and do the same with the cherry tomatoes. Set both aside.
Take a frying pan and put some olive oil on it, let it warm up. When it’s hot, add the mushrooms and the Reese Medallion Cut Hearts of Palm, add red pepper flakes and salt to taste, and stir fry. You can also optionally add garlic flakes and replace the olive oil with coconut oil if you want.
Once the hearts of palm and mushrooms stir fry is ready set them aside. On a plate serve some of the cooked quinoa, put some of the stir fry and the freshly cut cherry tomatoes on top it, and lastly, sprinkle with some chia seeds. The salad is ready.
You can (and I would recommend) accompany this dish with some grilled hearts of palm. For this you just need some uncut Reese Select Hearts of Palm and a bit of salt and oil. heat up your grill and put some olive oil on it. Get the whole hearts of palm directly out of the can and onto the grill, sprinkle with salt to taste and rotate them until all sides are beautifully browned. Serve immediately with your salad and enjoy!
